Best-ever glazed ham

INGREDIENTS


  • 100g brown sugar

  • 120ml Organic Road Maple Syrup

  • 40ml honey

  • 1T dijon mustard

  • 1 whole leg ham, on the bone

  • whole cloves


METHOD


  1. Combine sugar, syrup, honey and mustard in a bowl

  2. Preheat oven to 160°C. Line a large baking dish with baking paper. Use a sharp knif to cut around ham shank, about 10cm from the end. Work your fingers between the rind and the fat and lift off in one piece. Score fat in a diamond pattern, and stud with cloves. Place in baking dish

  3. Brush one-third of the glaze over ham. Bake, brushing with remaining glaze every 30 minutes, for 90 minutes.
